Hello Foodies!

I can see this is going to take some serious organisation & time management, so let’s start with something easy that’s tried and true. With winter comes lovely heart warming food. Using ingredients that you’ll pretty much always find in your cupboard. So I will start with a staple meal in Morocco or at least in our neck of Marrakech. Hubby loves it – me not so much but this blog is about food that cater’s to everyone’s tastes.

Pea & Lamb Tajine

4 forequarter lamb chops

1 medium onion diced

1 clove of garlic diced

a handful of parsley & coriander

2 tsp ground cumin

2 tsp paprika

1 cup frozen peas

Salt & Pepper to taste

150 mls water

lug of olive oil

In a heavy based saucepan or tajine add olive oil, diced onion, garlic, parsley, coriander & spices, fry until translucent & add chops, brown on both sides, add frozen peas and water bring to a gentle simmer and cook for at least 45 mins stirring occasionally . When the water is almost all evaporated it’s ready. Serve with crusty bread & vegies of your choice.
