No Red Meat this week.

Monday night was an easy dinner evening, the kidlets had porridge at their or Zachie’s request. We had chicken thighs marinated in chermoula with rice, all too easy and low fuss.

This week we are having a reduce the red meat intake challenge, so I am thinking up recipes that either are vegetarian or fish. Tonight we’re having a lovely bean & tomato tajine/cassoulet best of all Hafid’s cooking it, it’s gorgeous and the recipe will follow, we’ll have it with bread, but you can have it with rice, it’s a bit like baked beans, but they’re not baked.

It’s going to be an interesting week, I won’t miss the red meat, but I am wondering how Hubby will go.. we’ll keep you posted.
